This is a simple, cheap recipe that produces a good number of pancakes. I add blueberries sometimes. Whatever we don't eat I always freeze them to pull out for a quick breakfast.
2 eggs
Mix w/:
1 1/2 c. buttermilk or sour milk (to make you add 1 tbs. lemon juice or vinegar & add enough milk to make 1 c. total liquid. Stir & let stand for 5 minutes)
1/4 c. oil
Sift together:
1 1/2 c. flour
1 1/2 tsp.baking powder
1 tsp. soda
3/4 tsp. salt
3 tbs. sugar
